What we see most often in Dubai
Hollow-sounding tiles are the most common tiling complaint in Dubai, and the cause is nearly always incomplete adhesive coverage rather than a bad tile. In high ambient temperatures the adhesive skins over quickly, so if the tiler spreads too much bed ahead of themselves, the tile is placed onto a surface that has already started to cure and only the ridges make contact. The tile sounds hollow, and under load — a dropped object, a heavy castor, thermal movement in a sunlit area — it cracks or debonds. Working in smaller bays, back-buttering large formats and checking coverage as you go is what prevents it, and it cannot be corrected afterwards without lifting the tile.

Yes. Wet areas are tanked and allowed to cure before tiling starts. Skipping or rushing this stage is the usual reason water later appears in the room next door.
